Early, and with an offer

Two things decide the effect: when it arrives and whether an alternative follows. Cancelling early respects the other person's time. Naming a new date makes clear the cancellation isn't a rejection. Without an alternative, most people read it as a soft ending — which is fine, if that is what you mean.

When you don't want to go at all

Then the honest version is the right one, however uncomfortable. One sentence is enough: that you've changed your mind or aren't feeling it. No blame, no analysis of the other person. That is still far kinder than an invented excuse followed by three more suggested dates, and much kinder than slowly going quiet.
